Pumpkin & Spice Cake with Butter Cream Frosting

    Fall is the time for pumpkins, changing leaves, and cool temperatures.

     

    Why not charge up those days with a soul comforting dessert like pumpkin & spice cake. With ingredients like brown sugar, butter, vanilla, cinnamon, ginger, and pumpkin, how could you go wrong? You won’t spend the whole day baking either, it’s simple to make. But, who says you have to tell how easy it was? The flavor, the texture, and the presentation is incredible.

     

    COOKING TIME: 25-30 minutes

    SERVES: 12

     

    INGREDIENTS:

     

    1/2 cup butter, softened

    1 1/4 cup brown sugar

    2 eggs

    1 cup canned pumpkin

    1 1/2 teaspoon vanilla

    2 cups cake flour

    1/4 teaspoon baking powder

    1 teaspoon baking soda

    1/2 teaspoon salt

    1 teaspoon cinnamon

    1/2 teaspoon ginger

    1/2 cup milk

     

    METHOD

     

    1. Preheat oven to 350 degrees, spray 13 X 9 inch pan with non-stick baking spray.

    2. Beat together the butter and sugar until fluffy.

    3. Add eggs, pumpkin, and vanilla, and beat 1-2 minutes.

    4. In a separate bowl combine the flour, baking powder, baking soda, salt, and spices.

    5. Combine both mixtures, and mix well.

    5. Stir in milk.

    6. Pour batter into pan.

    7. Bake for 25-30 minutes, or until a toothpick inserted into the middle comes out clean.

    8. Let cake cool before frosting.

     

    FROSTING

    1 cup butter, softened (2 sticks)

    1 teaspoon vanilla

    4 cups powdered sugar

    3 Tablespoons milk (adjust to right consistency)

     

    METHOD

    1. Beat ingredients together on medium speed until smooth.

    2. Frost cake.
