Basically when the Cheese hits a certain temperature and “meets” the heat the fats liquefy and the cheese still stays together though. Then as the pizza keeps cooking the “Maillard Reaction” happens which is sugar reacting with Amino Acids to create A lot of Flavor. Then besides the flavor its that delicious soft on top and crispy on the bottom texture that makes it even better for me.
