Put a saucepan on a stove over medium heat. Pour in the oil and let it heat up.

Add minced garlic cloves in to the oil and stir it.

After few minutes, add finely chopped yellow onion and sauté it until soft.

Add red bell pepper with the yellow onions and let it cook for few minutes.

Keep the yellow onions and red bell peppers cut earlier, so that you can directly use it when cooking.

Let these vegetables cook and open up a can of vegetarian refried beans. If you are a vegetarian, you should make sure that the can of refried beans doesn’t contain lard in it. So, always check in to the ingredients before you buy.

If they are not mashed, then mash it with masher. Add the mashed beans directly in to the saucepan. Stir it well and let it cook.

Add taco seasoning and burrito seasoning. You can add these seasonings as per your taste too.

Cook it for about five minutes and remove it from the heat.

Let it cool for few minutes.

During this time, get the tortillas out from the plastic bag.

Sprinkle the shredded cheddar cheese on top of the warm baked potatoes mixture.

Add lettuce on top of the cheddar cheese.
