  1. Everyone loves a great, but simple chicken recipe that is loaded with flavor. The following recipes are fast, easy, and sure to please. They do not call for an outrageous amount of ingredients. You do not have to be a chef or have learned some special culinary skills to be able to accomplish these dishes. They were created to be cooked and on the table fast so you will not have to spend all day in the kitchen. That way you have more time to be with your family, friends, or entertain guests. Following is: grilled chicken breast recipes, stuffed chicken breast recipes, baked chicken breast recipes.

     

    Grilled Lemon Herb Chicken Breasts

     

    Ingredients

    4              Chicken Breasts (bone-in, skin removed)

    2              Fresh Lemons (juiced, seeds removed)

    1/4cup  Fresh Herbs (basil, rosemary, thyme, are all great, but choose your favorites)

                    You can substitute 1 tablespoon of dry herbs if needed

    Non-stick grill spray

     

    Begin by placing all ingredients in a large bowl and toss. Place bowl in refrigerator while you prepare the grill. You can use an outdoor gas or charcoal grill if you prefer, but these cook nicely on an indoor range top or electric grill. Once the grill is hot and ready to go (make sure to spray with non-stick spray), put the chicken breasts on and cook each side for 3-5 minutes or until the inside reached a safe temperature of 160-180 degrees. Remove the chicken and allow them to sit for two minutes before serving. A great side dish to serve with this is a fresh mixed greens salad with your choice of dressing, or perhaps garlic mashed new potatoes. Serves four.

     

    Grilled Indian Style Curried Chicken Breasts

     

    Ingredients

    4            Chicken Breast (bone-in, skin removed)

    1 cup     Plain Greek yogurt

    1/8cup  Mild Curry Powder

    A pinch of Salt

    20 drops Red Food Coloring (this gives it the hot pink color), if desired

     

    In a large color safe bowl, combine all ingredients, except the chicken breast, and stir thoroughly until the mixture is a consistent reddish-pink color. Add in the chicken breast and cover them completely with the mixture and place in refrigerator for at least an hour, although the longer the better. After the chicken is marinated, prepare your grill. This recipe works best in an indoor range top or electric grill. Cook the chicken breasts for 3-5 minutes on each side or until the center temperature reads 160-180 degrees. Serve these with sliced onion, tomatoes, cucumbers, and lemon wedges. Flat bread is also a nice accompaniment. Serves four.

     

    Grilled Jalapeño Chicken Breasts

     

    Ingredients

    4              Chicken Breast (boneless, skinless)

    3              Fresh Jalapeños (seeded for a milder taste)

    1              Medium Onion

    1              Bunch Fresh Cilantro (some stems are okay)

    1/2cup      Water

    4              Fresh Garlic Cloves (peeled)

     

    You will all ingredients (excluding chicken) into a blender or food processor and pulse until the smooth. Place chicken in a bowl and cover with the jalapeño mixture. Refrigerate for several hours, but twenty-four is better. When you have marinated your chicken breast to your taste, it is time to get your grill ready. Just as the grilled chicken breast recipes above, you can use the grill of your choice. This recipe tastes exceptionally great cooked on a charcoal grill though. Make sure the inside of your chicken reached a temperature of 160-180 degrees, or 3-5 minutes on each side. This dish is great served with grilled onions and bell peppers, Spanish rice, refried beans, and tortillas. Serves four.

     

    Stuffed Chicken Breast Florentine

     

    Ingredients

    4              Chicken Breast (boneless, skinless, and butterflied)

    1/2cup      Frozen Spinach

    1/2cup      Fresh Mushrooms (chopped)

    1/2cup      Soften Cream Cheese   

    1/4cup      Bread Italian Crumbs

    1/2tsp       Dry Italian Seasoning

    Salt and Black Pepper to taste

     

    Preheat your oven to 450 degrees. Place the butterflied chicken breasts on a tray then salt and pepper inside and out, set aside. Mix together the remaining ingredients in a bowl. Spoon the mixture on one side of the chicken breast, evenly distributing between the four pieces. Fold the chicken starting at the mixture end and place in an oven safe dish (coat with non-stick spray). Bake the stuffed chicken breast for 20 minutes or until the juices run clear when poked (temperature should be about 160-180 degrees in center). This dish is great to top olive oil and garlic pasta with a side salad and French bread. Serves four.

     

    Seafood Stuffed Cajun Chicken Breasts

     

    Ingredients

    4            Chicken Breast (boneless, skinless, and butterflied)

    2 tsp      Cajun Seasoning

    1 cup     Seafood Deli Salad

    4 slices  Munster Cheese Slices

    Salt and Pepper to taste

     

    Preheat your oven to 450 degrees. Salt and pepper both sides of the chicken breast and place on a tray or wax paper. Mix the Cajun seasoning and the seafood salad together in a bowl. On one side of the chicken breast, spoon a quarter cup of the salad. Fold the empty side of the chicken breast over the seafood salad side. Put the stuffed breast into an oven safe glass or metal dish and top each breast with one piece of the Munster cheese slices. Cook them for twenty minutes or until the inside temperature reaches 160-180 degrees. Serve this along with some dirty rice and French bread. Serves four.

     

    Bar-B-Q Bacon Stuffed Chicken Breasts

     

    Ingredients

    4              Chicken Breast (boneless, skinless, and butterflied)

    8              Pieces Precooked Bacon

    4              Slices Sharp Cheddar Cheese

    1 cup        Your favorite BBQ sauce

    Salt and Pepper to taste

     

    Preheat oven to 450 degrees. Place chicken breast in an oven safe dish and put two pieces of bacon and one slice of cheese on one side and roll up. Top with the BBQ sauce, cover with foil, and cook until the inside temperature reads 160-180 degrees (or 20 minutes, just like the other grilled chicken breast recipes and stuffed chicken breast recipes). Enjoy with ranch style beans and mac-n-cheese. Serves four.

     

    Stove Top Mock Baked Chicken Breasts

     

    Ingredients

    4            Chicken Breast (bone-in, skinless)

    2 tsp      Seasoned Meat Tenderizer

    1 cup     Water

    Foil, Stock Pot

     

    Crumple a piece of foil to cover the bottom of a stock pot and add the cup of water over the top. Put in the chicken breast and sprinkle with seasoning on both sides. Cover and cook on medium until the inside temperature reaches 160-180 degrees. The cooking time will vary depending on your stove. Match this entrée with rice and a Cesar salad. Serves four.

     

    Lemon Pepper Baked Chicken Breasts

     

    Ingredients

    4            Chicken Breasts (boneless, skinless)

    2 tsp      Lemon Pepper Seasoning

    Salt to taste

     

    Preheat oven to 450 degrees. Add the seasoning to the chicken breasts all over (including salt) and place in an oven safe dish and bake for 20 minutes (or temp reached 160-180 degrees). Serve with Sliced tomatoes and wild rice. Serves four.

     

    Baked Parmesan Crusted Chicken Breasts

     

    Ingredients

    4            Chicken Breasts (boneless, skinless)

    8 tbsp    Graded Parmesan Cheese

    2 tsp      Italian Seasoning

    Salt and Pepper to taste              

     

    Preheat oven to 450 degrees. Coat chicken with seasonings and top each breast with two tablespoons of the parmesan cheese, Place in an oven safe dish and just like the other grilled chicken breast recipes, stuffed chicken breast recipes, and baked chicken breast recipes above, make sure the inside temperature of the chicken comes to 160-180 degrees for safety (which is about 20 minutes). These go great with a simple marinara pasta and garlic bread sticks. Serves four. Enjoy one or all the above recipes and feel free to make them your own by adding or changing any of the ingredients to your liking.
