  1. Fajitas are one of the popular and healthy Mexican dishes which are easy and quick to make at home. If you cook fajitas correctly, then you would be able to consume many health benefits. You can add various vegetables and meats in your fajita recipes to make them one of the healthy choices for you. Here, you will find two fajita recipes, such as Chicken Fajita Recipe and Vegetable Fajita Recipe.
     
    Fajita Recipe: 1, Chicken Fajita Recipe
     
    Serves: 3 to 4
    Ingredients
     
    2 cups of Boneless and Skinless Chicken Breasts
    1/2 cup of Thinly Sliced Green Pepper
    1/2 cup of Thinly Sliced Yellow Pepper
    1/2 cup of Thinly Sliced Red Onions
    2 Big Cloves of Garlic
    1 ½ teaspoon of Ginger Paste
    4 tablespoons of Lemon Juice
    1/2 tablespoon of Taco Seasoning
    1 ½ tablespoon of Fajita Seasoning
    2 teaspoons of Black Pepper Powder
    3 tablespoons of Canola Oil
    Salt, as per Taste
    4 Warm Tortillas
    3/4 cup of Guacamole (Optional)
    3/4 cup of Sour Cream (Optional)
    3/4 cup of Salsa (Optional)
     
    Directions
    • Obtain a cutting board and put the boneless and skinless chicken breasts on it.
    • Cut it in to thin slices or small pieces. Put it aside in a bowl.
    • Obtain a mixing bowl and add lemon juice.
    • Get the whole garlic and take two big cloves. Remove the skin and mash them.
    • Add these mashed garlic cloves in to the mixing bowl. Mix it with lemon juice.
    • Add the ginger paste in to the mixing bowl and give it a quick stir.
    • Add taco seasoning and fajita seasoning. Stir it well.
    • Add black pepper powder and salt. Mix it well.
    • Get the thin slices of chicken breasts and add it in to the mixing bowl.
    • Make sure to spread all the marinades on chicken breasts.
    • Let it marinade for about twenty to thirty minutes. If you are in hurry, then you can keep it for about ten minutes.
    • Get the fresh vegetables and wash them with water.
    • Chop the green pepper, yellow pepper, and red onion in to thin slices.
    • Put them aside in a bowl or dish for few minutes.
    • Put a cast iron fajita pan on a stove over high heat.
    • Pour in canola oil on a cast iron fajita pan and let it heat up.
    • Put thin slices of chicken breasts on the cast iron fajita pan and let it cook for about six to seven minutes.
    • Keep checking in few minutes to make sure that the chicken breasts are not sticking to the bottom of fajita pan.
    • When the thin slices of chicken breasts are tender enough, add all the fresh and chopped vegetables.
    • Sauté them properly for about three to four minutes. Sprinkle some fajita seasoning on top of it, if you need more.
    • Place the chicken fajita mixture on one side of warm tortilla and roll it as a burrito. Your chicken fajita is ready to eat.
    • Serve it hot with warm tortillas and other sides.
    • You can add guacamole, sour cream, or salsa. These items are optional, so use it if you need it.

    Serves: 3 to 4
    Ingredients
     
    1 cup of Thinly Sliced Red Bell Pepper
    1/2 cup of Thinly Sliced Yellow Bell Pepper
    1 cup of Thinly Sliced White Onion
    1/2 cup of Thinly Sliced Mushrooms
    1 cup of Thinly Sliced Spinach
    3 tablespoons of Lime Juice
    1 ½ Big Clove of Garlic
    1 ½ teaspoons of Ginger Paste
    1/2 tablespoon of Taco Seasoning
    1 tablespoon of Fajita Seasoning
    1 teaspoon of Cayenne Pepper
    Salt, as per Taste
    2 tablespoons of Canola Oil
    4 Warm Flour Tortillas
    3/4 cup of Guacamole (Optional)
    3/4 cup of Sour Cream (Optional)
    3/4 cup of Salsa (Optional)
    3/4 cup of Shredded Cheddar Cheese
     
    Directions
    • Get all the fresh vegetables, such as red bell pepper, yellow bell pepper, white onion, mushrooms, and spinach. Wash them thoroughly with water.
    • Get a cutting board and start by cutting red bell pepper and yellow bell pepper in to thin slices. Keep it aside on a big tray.
    • Clean the white onion and cut it in to thin slices. Place the thin slices of white onion on to the tray.
    • Get the mushrooms and cut them in to thin slices too. Keep it aside.
    • Chop the spinach in to medium pieces and put it on a tray.
    • Get a big mixing bowl and pour in the lime juice to make the marinade for vegetable fajita recipe.
    • Add mashed garlic and ginger paste. Mix it well.
    • Add taco seasoning and fajita seasoning in to the lime juice and stir it well.
    • Add cayenne pepper and salt as per taste. Give it a quick stir.
    • Make sure that all the dry ingredients have completely dissolved.
    • Add all the fresh vegetables one by one in to the marinade and mix it well.
    • Let the vegetables marinade for about ten to fifteen minutes.
    • Put a cast iron fajita pan on a stove over high heat.
    • Pour in the canola oil and let it heat up.
    • Add the marinade vegetables on to the cast iron fajita pan and let it sauté for about five to six minutes.
    • Remove from the heat and put it aside.
    • Keep the warm tortillas ready for serving. You can place the vegetable fajita mixture on to the tortilla and roll it as a burrito.
    • You can also add other condiments with vegetable fajita, such as guacamole, sour cream, salsa, and shredded cheddar cheese on top of it.
    • Serve it hot and enjoy.
