    Healthy Butternut Squash Soup Recipe

    Serves: 4
    Ingredients
     
    1 tablespoon of Olive Oil
    2 teaspoon of Dry Rosemary Leafs
    1 teaspoon of Dry Celery Seeds
    1 ½ teaspoon of Black Pepper Powder
    1/2 cup of Bite Sized Pieces of Onion
    1/2 cup of Bite Sized Pieces of Butternut Squash
    2 Big Cloves of Garlic
    2 ½ cups of Chicken Broth
    1 ½ cups of Butternut Squash Paste
    Salt, as Per Taste
    2 teaspoon of Fresh Rosemary Leafs

    Directions

    • Take one cutting board and peel of the butternut squash and onion ahead of time.
    • For butternut squash, take away the seeds as well. Cut the squash in two equal parts. Make a paste out of half of the butternut squash by putting in to a mixture.
    • Take other half of the butternut squash and cut it in to small bite sized pieces. Do the same for onion. Put these two ingredients aside.
    • Get two big garlic cloves and make garlic paste out of it. Keep it aside for further usage. If you don’t want to use paste, you can also cut garlic in very tiny small pieces.
    • Put a deep cooking pot on a stove over a medium heat.
    • Pour in the olive oil. Immediately, put in all the dry ingredients, such as dry rosemary leafs, dry celery seeds, and black pepper powder. Mix it well.
    • Add the bite sized pieces of onion and butternut squash. Sauté it for 4 minutes.
    • Add garlic paste or finely chopped garlic. Mix it well.

    Grilled Butternut Squash with Basil Recipe

    Ingredients
     
    2 tablespoon of Olive Oil
    1 teaspoon of Dry Basil Leafs
    1 teaspoon of White Pepper’s Powder (Substitute Black Pepper Powder)
    1 tablespoon of Butter
    2 ½ tablespoon of Fresh Basil Leaf Paste
    1 ½ teaspoon of Ginger Paste
    1 ½ teaspoon of Dijon Mustard
    2 tablespoon of Cream Cheese
    1/3 cup of Fresh Basil Leaf
    1 Medium Sized Butternut Squash
    Salt, as Per Taste
     
    Directions
    • Get one medium sized butternut squash. Peel the skin out from the butternut squash and also cut it in to two pieces.
    • Remove the seeds from the butternut squash.
    • Cut it in to long and medium thick slices.
    • Preheat your grill on high heat at first. When you are ready to grill your butternut squash, turn the heat to the medium.
    • On the other hand, take one bowl. Pour in the olive oil and other dry ingredients, such as dry basil leafs, white pepper’s powder, and salt. Mix all these ingredients well.
    • Take your long and medium thick slices of butternut squash and dip it in to this olive oil mixture.
    • After soaking them in this mixture, directly put them on the grill.
    • Cook it on both sides until its tender.
    • While these slices are cooking on the grill, put one saucepan on a stove over medium heat. Add the butter.
    • Add these pastes, fresh basil leaf paste and ginger paste. Mix it well.
    • Add Dijon mustard, cream cheese, and fresh basil leafs. Sauté all these ingredients for few minutes.
    • Get the grilled butternut squash and add it in to this creamy mixture. Let it cook for ten minutes, so that all the flavors get infused in to the grilled squash.

    Butternut Squash Puree with Green Peas Recipe

    Serves: 4
    Ingredients
     
    1 Medium Sized Butternut Squash
    2 – 3 cups of Water
    1 tablespoon of Cilantro
    2 tablespoon of Canola Oil
    1 teaspoon of Whole Cumin Seeds
    1 teaspoon of Dry Sage Powder
    2 teaspoon of Garlic Paste
    2 teaspoon of Ginger Paste
    1 ½ teaspoon of Green Chili Paste
    1 ½ tablespoon of Tomato Paste
    1/2 cup of Small Pieces of Butternut Squash
    2 cups of Green peas
    1 tablespoon of Finely Chopped Fresh Cilantro for Garnishing
    Salt, as Per Taste

    Directions

    • Take a cutting board and clean the medium sized butternut squash. To clean your butternut squash, you have to peel the outer skin and remove the seeds from butternut squash.
    • Cut it in to small to medium sized pieces.
    • Put one cooking pot on a stove over high heat. Pour in the water and bring it to the boil.
    • Add in salt and pieces of butternut squash. Let it cook until it’s tender.
    • When the butternut squash is properly cooked, then drain the excess water from the cooking pot.
    • Leave about 1/2 cup of butternut squash pieces in a bowl for further usage. While put the remaining cooked butternut squash pieces and salt in to the blender to make smooth puree.
    • Before you make puree, also add the finely chopped cilantro with the butternut squash for extra aroma and taste.
    • Blend these two ingredients together until it gets puree like smooth texture. When ready, keep it aside in a bowl.
    • Put one big saucepan on a stove over high heat.
    • Pour in the canola oil and let it heat up.
    • Add whole cumin seeds and dry sage powder.
    • Immediately, after then add garlic paste, ginger paste, and green chili paste. Lower the heat and sauté these pastes together for few minutes.
    • Add tomato paste and let it cook until you see the oil coming out from the edges.
    • Add the small pieces of butternut squash as well as add green peas. Sauté them for few minutes.
    • Pour in the butternut squash puree that has been already made earlier.
    • Let this butternut squash puree cook for 15-20 minutes.
    • Serve it hot and garnish it with finely chopped fresh cilantro on top of it.
