    Strawberry Chocolate Mousse Cake

    What you need

    • 1 cup chocolate cookie crumbs
    • 3 tablespoons butter, melted
    • 2 pints fresh strawberries, halved
    • 2 cups semisweet chocolate chips
    • 1/2 cup water
    • 2 tablespoons light corn syrup
    • 2 1/2 cups heavy whipping cream
    • 1 tablespoon white sugar

    How to prepare

    Mix crumbs and butter. Press this mixture onto the bottom of a 9 inch springform pan. Line the sides of the pan with strawberry halves with the pointed ends up and cuts against the pan.

    Put the chocolate chips into a blender. Mix water and corn syrup in a small pan and bring to a boil for a minute. Immediately pour into blender over chocolate chips. Blend mixture until smooth. Let mixture cool to room temperature.

    In a large bowl combine and beat 1 1/2 cups of the cream until it forms stiff peaks. Fold cooled chocolate into cream and blend. Pour the mixture into the springform pan ensuring the top is level. Cover with plastic wrap and refrigerate 4 to 24 hours.

    Within 2 hours before serving, beat 1 cup of cream to make soft peaks then add the sugar. Beat until stiff peaks form. Remove sides of the pan and put the whipped cream on top of the cake. Arrange fresh strawberry halves around the top of the cake.

    Serve

    To serve, cut into small slices and serve with fresh whole strawberries on the side.

     

    Cornmeal Strawberry Cake

    What you need

    • 1 1/3 cups cornmeal
    • 2/3 cup unbleached all-purpose flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 3/4 cup unsalted butter
    • 1 1/4 cups white sugar
    • 4 eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup plain low-fat yogurt
    • 1 cup sliced fresh strawberries

    How to prepare

    Preheat your oven to 350 degrees F. Grease and flour (or use flour baking spray) a 9 inch round pan.

    Mix together cornmeal, flour, salt, and baking powder.

    In another bowl, cream the butter and sugar together. Add eggs one at a time and beat until combined. Stir in the vanilla. Alternate adding the dry ingredients with the yogurt while stirring the mixture. Use a spatula to fold in the strawberries and pour the batter into the pan.

    Bake for 45 to 50 minutes or until a toothpick comes out clean. Cool for 30 minutes prior to serving.

    Serve

    To serve, cut cake into small pieces. Add fresh strawberries on the side. Other options are to add a dollop of whipped cream to the top.

     

    Strawberry Refrigerator Cake

    What you need

    • 1 (18.25 ounce) package strawberry cake mix
    • 2 (10 ounce) packages frozen strawberries
    • 1 (3.5 ounce) package instant vanilla pudding mix
    • 1 cup milk
    • 2 cups frozen whipped topping, thawed
    • 1 pint fresh strawberries

    How to prepare

    Prepare and bake the cake according to the directions on the box. Let cool. After it has cooled, poke holes in the top of the cake.

    Puree thawed strawberries with the juice in a blender. When blended, spoon over the top of the cake.

    Prepare the topping by mixing the pudding as directed using one cup of milk. Use a spatula to fold in whipped topping before spreading over cake.

    Refrigerate at least 4 hours before serving.

    Serve

    Arrange fresh strawberries on top of the cake and slice. Place slices on plate with fresh strawberries on the side.
