  1. It is very hard to keep up with your health when you are very busy with your work, school, or life. Sometimes it gets impossible to have all the vitamins and minerals in one meal that you are planning to eat. For that reason, having different kinds of healthy vegetable side dishes or other vegetable recipes is a good idea to match up with the health chart. These are some of the healthy vegetable side dishes’ recipes, such as mix nutty vegetable salad, tomato-onion soup, and fruit salad with Greek Yoghurt which you can enjoy as vegetables sides with your meal.

    Vegetable Side Dish Recipe: 1- Mix Nutty Vegetable Salad

    Serves: 5
    Ingredients
     
    1 tablespoon of Extra Virgin Olive Oil
    2 ½ tablespoon of Balsamic Vinegar
    1 ½ cup of Bite Sized Pieces of Romaine Lettuce
    1/2 cup of Bite Sized Pieces of Tomatoes
    1 cup of Thinly Sliced Red Onion
    1 cup of Thinly Sliced Carrots
    1 cup of Thinly Sliced Green pepper
    1/2 cup of cut Pecan
    1/2 cup of cut Almonds
    2 ½ teaspoon of Black Pepper’s Powder
    Sea Salt, as per Taste

    Directions

    • Get big salad bowl ready and put it aside.
    • In one small bowl, mix extra virgin olive oil and balsamic vinegar. Mix these two items together and keep it on side.
    • When you buy vegetables from the store, always make sure that you wash them thoroughly before using them. It would help in washing away all the pesticides or chemicals from these vegetables outer skin.
    • Get a cutting board and cut all the fresh vegetables as described above.
    • Now, add bite sized pieces of romaine lettuce, bite sized pieces of tomatoes thin slices of red onions, carrots, and green pepper.
    • Adding more vegetables not only gives good color to your salad but also gives varieties of vitamins and minerals.
    • Gently, mix all these vegetables together.
    • Add cut pecan and almonds in to these vegetables. Mix them well.
    • You can always add nuts at very end or when serving if you want to keep the crunch. Otherwise, liquid mixture can make the nuts more soggy.
    • Get the mixture of extra virgin olive oil and balsamic vinegar and pour in to the salad bowl. Slowly, mix this mixture with all the vegetables and nuts.
    • Sprinkle black pepper powder and sea salt.
    • Keep it at cool place or refrigerate it before serving.
    • Your one of the healthy and crunchy vegetable sides is ready to eat.

    Vegetable Side Dish Recipe: 2- Tomato-Onion Soup

    Serves: 4
    Ingredients
     
    2 tablespoon of Olive Oil
    1 ½ teaspoon of Cinnamon Powder
    1 ½ teaspoon of White Pepper Powder
    1 Bay Leaf
    1 ½ teaspoon of Garlic Paste
    2 teaspoon of Ginger Paste
    2 Cups of Vegetable Broth
    1 ½ Cups of Tomato Puree
    1 ½ Cups of Onion Puree
    Salt, as per Taste
    2 tablespoon of Sour Cream

    Directions

    • Put a saucepan on a stove over a high heat.
    • Add oil and let it heat up.
    • Add all the dry ingredients, such as cinnamon powder, white pepper powder, and bay leaf. Mix it well with oil.
    • Add garlic paste and ginger paste. Sauté the pastes for few minutes.
    • Lower the high heat from medium heat.
    • Pour in the vegetable broth and bring it to one boil.
    • Add salt as per your taste.
    • To make the paste at home, simply cut the garlic or ginger in small pieces.
    • Put it in a mixture and crush it until it gets paste like smooth texture.
    • Add tomato puree and onion puree one by one.
    • For the puree, if you don’t want to spend time in making it then you can buy directly from store. 
    • To make puree at home, boil the tomatoes and onion separately in one bowl with water.
    • Cook it until it gets tender. Drain the excess water from tomato as well as onion and put it in a bowl.
    • Put tomato and onion separately in blender. Blend it until it gets sauce like soft texture. Your puree is ready to use.   
    • Keep stirring and cook until it gets thick texture.
    • Garnish it with sour cream on top of it.
    • Serve this vegetable side recipe hot.

    Vegetable Side Dish Recipe: 3 – Fruit Salad with Greek Yoghurt

    Serves: 4
    Ingredients
     
    2 cups of Greek Yoghurt
    3 tablespoon of Honey
    3 teaspoon of Dry Mango Powder
    2 teaspoon of Black Pepper Powder
    1 cup of small pieces of Pineapple
    1 cup of small pieces of Apple
    1 cup of cut Green Grapes
    Salt, as per Taste

    Directions

    • In one bowl, pour in the Greek yoghurt. Whisk it well so that there is no chunks of yoghurt remain.
    • Add honey, dry mango powder, and black pepper powder.
    • Mix all these ingredients with yoghurt. Keep it aside at cooler temperature.
    • Wash all the fruits thoroughly before using it to stay away from any bacteria or pesticides from the outer skin of the fruits.
    • Get a cutting board and cut all the fruits in bite sized pieces.
    • You can also buy readymade fruits cans from the store. But, it is always a good idea to have fresh fruits whenever you can.
    • Now, get a salad bowl and add the pineapple, apple, and grapes.
    • Gently, mix all these fruits together.
    • Add the Greek yoghurt dressing that we have made earlier.
    • Pour on to the fruits and slowly mix all the ingredients together.
    • Dry mango powder has tart flavor, so make sure you taste the salad before adding any salt.
    • Keep it refrigerate before using it.
    • Garnish it with grapes and your fresh and healthy vegetable side dish is ready to enjoy.

    Adding fruits, vegetables, nuts, dairy products with your vegetable side dishes is very healthy choice to make.
