  1. Yummy Chicken Casserole

    It’s hard to get toddlers to eat sometimes. Some toddlers won’t eat meat and others won’t eat vegetables. Here’s a delicious chicken casserole the whole family will love, that you can easily tailor to your own families particular tastes.

    Ingredients:

    • 1 whole hen, cooked and deboned
    • 16 oz elbow macaroni
    • 1 14 oz can diced tomatoes
    • 2 finely chopped garlic cloves
    • 1 finely chopped onion
    • 1 10.5 oz can condensed cream of mushroom soup
    • 1 10.5 oz can condensed cream of chicken soup
    • 8 oz milk

    Directions:

    1. Heat oven to 375 F (190 C.)

    2. Mix all ingredients in a 9X13 baking pan.

    3. While baking, stir occasionally to make sure macaroni doesn’t get hard.

    4. Serve.

    Tips:

    • Mix and match! Add whatever vegetables you want. Good choices are broccoli and cauliflower florets, carrots, or frozen mixed vegetables. Try different cheeses. This is just a basic recipe that can easily be changed.
    • For extra flavor, cook the chicken with a bay leaf, Italian seasoning, salt, black pepper, and garlic powder.
    • If you’re worried the macaroni won’t get done, cook it first in some of the broth left over from your chicken. Adds even more flavor without being too much.
