Coconuts are a type of fruit known as a drupe. The final hard brown shell has had an outer husk removed before being sold. The inedible pithy exocarp and mesocarp layers are the husked outer portions of the fruit. The brown shell is the endocarp and the only remaining portion of the fertilized ovary. Inside this is the endosperm (coconut meat) and the embryo. Since most coconuts are harvested immature the embryo is not usually obvious but it will emerge from one of the three eyes.
