Sprouting tends to kill the gluten, so you should look into Ezekiel or Sprouted breads. Wheat sprouts are perfectly fine to have for folks who are gluten intolerant. You have to be careful with gluten intolerance, though, because even some other grains may have various forms of gluten which could set you off … eg: oatmeal. For the most part, you should stick with rice if you can tolerate grains but can’t tolerate gluten. However, even then…there’s such things as glutenous rice. You really have to be careful. I’m personally gluten & lactose intolerant, so I basically gave up all grains and all dairy (yes, including yogurt). I pretty much eat a protein diet, sans cheese. Green veggies, occasional potatoes/corn.
