Can anyone give me a chicken curry recipe that tastes like i would get from an Indian Restaurant?
I am a former chef and do alot of Indian cuisine, first off getting a good blended curry powder, brown the chicken, roast the spices, garlic, ginger and onions in the pan, adding the curry spices and sweating them, then add back the chicken, some broth to cover, even coconut milk f you like simmer slowly, I do mine in a crockpot, adding veggies like mushrooms, potato’s, chickpeas or green veg like spinach or others, for prawns or shrimps in with the chicken, light ly cook them and add just before serving as hey go rubbery if overdone, if you can find ones with the heads they make a nice presentation at the table. Finish with plain yogurt, chopped cilantro/coriander, nuts or just a bit of parsley. I am on a low carb diet so I sop up the gravy with a whole wheat naan, but rice is nice too.
