Can anyone give me an easy recipes for making muffins?
This is the recipe I use: 3/4 cup milk 1/4 cup vegetable oil 1 large egg 2 cups all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 cup of your favorite berry or fruit Preheat oven to 400. Grease muffin tins or line with paper baking cups. Beat milk, oil and egg. Stir in flour, sugar, baking powder and salt and mix just until moistened. Fold in chosen fruit. (to be honest, I use 1-1/2 cups of berries) Fill muffin tins 3/4 full and sprinkle generously with sugar. Bake 20 to 25 minutes or until golden brown. Cool 5 minutes in greased tins or if using baking cups remove to wire rack immediately. I cheat if I am required to make lots of muffins!! (48 or more) I’ll buy those 75 cent packages and add a cup of berries to it.
