My father was vegetarian and my mother couldn’t be bothered to cook two dinners so we grew up vegetarian. Although I rebelled a little in my teens I ‘ve been vegetarian ever since. Some of the most satisfying vegetarian food I’ve ever cooked comes from Madhur Jaffrey’s Vegetarian cook book. The southern Indians have been vegetarians far longer than the Christian version introduced into the UK in the mid 19th Century. Its different. It’s not loaded with lentils either. It varies completely from standard Western fare because we tend to fall into the trap of trying to substitute the meat with another dish and then adding in the proverbial ‘two veg’. It’ll help you stick to the principle! Every now and then double fried egg and chips ~ magic!!
