They are singular and plural, you can use them in the right context eg “Five people do exercise every morning” means that all five people do some form of exercise and “Five people do exercises every morning” means that all five people do more than one exercise, some might do one, some might do a different one and some might do more than one exercise. “Will Fred will do exercise tomorrow” and “Will Fred will do exercises tomorrow” are similar but the first sentence shows that Fred will do some form of exercise and could do one exercise or several different exercises.
