I have always used Jell-O Icing when I needed a specific color. Liquid food coloring doe not do it and the gel and powder food coloring is harder to find in my area. Jell-O Icing 1/2 pound butter 2 cups powdered sugar (10X) 1 3-oz package Jell-O, color to complement cake 1/2 cup boiling water Cream butter and sugar. Dissolve Jell-O in boiling water; cool to room temperature. Slowly mix cooled jell-O into butter/sugar moisture, until desired color is obtained. Entire package may not be required. Spread on poke cake.

Yes you can colour it but take care not to overwork the icing as if the butter curdles slightly you will get white spots in the icing.
