I always bake my sweet potatoes in the oven, they are at their best that way. It takes a little less time for a sweet potato to bake than a regular russet potato…35 min. instead of 45 min. I like to bake it without being wrapped in foil so the skin does get crispy. You do have to put foil or something under it though because they will sometimes ooze juice out and make a mess in your oven. They do make a jacket now for you to cook potatoes in the microwave and it keeps the potato dry and fluffy, I have one and they work great. They have beta-carotene. I have found sweet potatoes go really well with baked salmon so the combination has become a weekly ritual for me now.
