Can I cut the EGT Thermocouple wires shorter? Can I extend them longer with standard copper wire?

We do not recommend either one. EGT Thermocouple is a device formed by the junction between two special dissimilar metals which transforms heat energy into electrical energy. Attempting to extend the wires with a third metal (copper) will throw off the reading. Shortening the wires is not practical without specialized tooling. If you have too much wire length, coil it up neatly, wire tie it together, and tuck it away.
