Can i make a peach pie with firm peaches?
Firm means not ripe. You can make the pie with the peaches, but you’ll need to add extra sugar and slice them thinly in order for the sugar to have a chance to penetrate the sourness of the unripe peaches. Expect the results to be under par – maybe even inedible. I highly suggest putting your peaches in a paper bag on the kitchen counter for a couple of days or more to give them a chance to get more ripe. In future, the best place to buy peaches is a farmer’s market or farm. Go at the end of the day and see if you can get the peaches that they would ordinarily have to throw out because they are too ripe to make it to the next day. If you can’t get to a farmer’s market, try asking the produce manager of a good grocery store if they have any overripe peaches. The best peaches for pie or cobbler are so ripe, you can peel them with your fingers. Good luck!
