Can I safely make garlic or herb flavored oil at home?

Rating: 100 It is not recommended that one make flavored oils at home. It is okay to crush garlic/herbs and place in oil and refrigerate for daily use. Quantities left at the end of the day should be discarded. Commercially prepared products acidify the garlic prior to adding oil. We do not have any studies that tell us how long the garlic would have to be in the vinegar for it to become acidified.
