I don’t know if butter would work or not. You can melt Crisco or something like that. My mom used to do that. You can also substitute applesauce for the oil in recipes to make it healthier. I’ve also heard avocado works too. It sounds funny but I was told it is a great substitute. ** If you end up melting something to use, make sure you mix it with the cold ingredients and then add egg. If you add egg while the butter/crisco is hot it can cook the egg in the bowl.
