Fudge is one of those recipes that you don’t want to mess with if you aren’t very experienced in candy-making. Also, I want to be sure you are talking about evaporated milk and not sweetened condensed milk, which are two different things. In any case, you can’t substitute any of these things for one another in a fudge recipe.
