Yes you can. Or, as the other people said, you can bake them on the sheet pan without foil. However, the foil makes clean up a lot easier. Another option would be to buy a silicon baking mat, called a “silpat mat”. Just lay the mat on a sheet pan and bake your cookies on the mat. These mats are great and you don’t need to oil them. They are reusable, cheap and make clean up a snap…. the cookies never stick to them. They are a good option for parchment paper or wax paper…. and they have multiple uses. (By the way, I’ve used foil many times to bake cookies and it works great.
