If you have regular milk you can use that. Add a little lemon juice and voila, you will have buttermilk. Coconut, sweetened, or evaporated would probably be too sweet or too strong. Check on the label for evaporated milk to see if you can add water to make it the consistency of regular milk. That would work too.
