Can leftover brining solution be reused?

Rating: 70 If you have excess vinegar solution when you make fresh pack pickles it may be stored and used with another batch of pickles. If the vinegar solution is one that was used on the cucumbers in a brining or soaking step or from canned pickles it should not be reused with another batch of cucumbers because some of the water in the cucumbers has been exchanged for vinegar that dilutes it, therefore changing the pH. Use for making cabbage slaw or other vegetable salads. PREPARED BY: Angela M. Fraser, Ph.D., Associate Professor/Food Safety Specialist, and Carolyn J. Lackey, Ph.D., R.D., L.D.N.
