Can someone explain Arab/Egyptian/Muslim family system?

Because of their religion, they want for their children to be muslim too (at least, that’s with 95% of the families). Maybe because he is with you, his family might have expressed some concerns towards him regarding you, because they probably want their son to marry a muslim. And you’re not officially allowed to date before you get married, so he might even had some trouble at home for dating someone. That can also be the reason he doesn’t like talking about his family, because he doesn’t want to be angry with them because they’re his parents after all, but he also doesn’t want to lose you.
