can stocks and mutual funds and money in impound account count as cash reserve for refinancing.?

i’m doing refinancing and wondering if stocks, mutual funds, and money in my old mortgage impound account be used as cash reserve for my new loan. My new loan doesn’t require impound so I will get the money back to me from my old lender as soon as my balance get funded.
