We solve this problem with a “flat backroll”. Many of the Piemaster mold sets have pockets or depressions in the front (crimper) and back rolls. The pockets are there to allow the dough to pull back and fill a space that will eventually form the back side of the turnover. When you need less volume in a large turnover with a small filling weight, order the flat back roll with the machine order. This roll has no pocket and effectively reduces the volume inside the turnover.
