As far as I know, they can only see who you send messages to and receive messages from. However, I’m pretty sure they can’t see the actual message. That’s a pretty intense abuse of privacy. It’s as if they were tapping your calls. Your parents can see who you’re texting, though, if you’re under 18, or if you’re under a family plan they might too.
