Here are a couple of my favorite: Shrimp and Gorgonzola Salad Ingredients: 1 sm to med bag fresh baby spinach leaves (you can buy the pre-washed. If you don’t then make certain you wash and spin dry.) 1 package frozen, precooked shrimp (thawed – you can run under cold water for three or four minutes and they will thaw.) 1 container pre-made deli Italian pasta salad (the kind made with vinegar and oil, NOT mayo) 1 small container Gorgonzola crumbles. Toss all ingredients and enjoy! Broccoli Sunshine Salad Ingredients: 2 heads fresh broccoli, chopped 8 tbsp. chopped green onions with greens 1 c. golden raisins 7-10 slices bacon 1/2 c. sunflower seeds DRESSING: 1 c. mayonnaise or salad dressing 1/4 c. sugar 2 tbsp. vinegar Prepare broccoli, onions, raisins; mix together. Cut up and fry bacon. Drain and add sunflower seeds. Mix with vegetables and raisins. Blend dressing ingredients and mix with other ingredients. Put in refrigerator for 2 hours.
