How lucky you are to have a wood-burning stove and dutch oven to cook in on the top!!! I’m jealous! Have you ever slow-cooked anything like a stew or soup in it? I had a friend years ago who used his wood-burning stove for that kind of cooking. He also used to open the doors and grill meats in a special “basket” over the bed of hot coals. WOW! Was that YUMMY! Now, since I’ve mentioned the bed of hot coals…….. I can get to the answer to your question. To brown the top (of anything) you need to put some of those hot coals on the cover of the dutch oven. BUT FIRST – A DISCLAIMER!!! Now, I’m not a lawyer or OSHA or anything like that, but this is OBVIOUSLY a risky thing to do. You would NEVER want to do this kind of thing and leave it unattended for even a SECOND!!! Those coals are hot (duh), they can “pop” and end up on the floor, roll off the cover onto something flammable, etc etc etc. NEVER use charcoal briquettes for this because they exhaust carbon monoxide.
