stove or cooktop; whatever your new design plans are. You may be able to add a filler piece in the back if you’re not replacing the countertop or planning a major remodeling. Depends on the model of your old downdraft - I assume it' an older model or you wouldn’t be pulling it. For example, Dacor and Termador were designed for a rear horizontal downdraft and Jenn-air’s downdraft was centered between the burners. You just remove all your old downvented ductwork and seal off the exit. I hope you have an overhead venting system in mind. No venting is a mistake. Even if you’re a vegetarian, oils from foods, even pasta, get into the air waft around on air currents. The stuff settles on surfaces. Especially any fabrics nearby if you have an open floorplan. Over time creates a sticky surface that draws dirt.  more
