I usually use Stork margarine in baking recipes unless I’m baking something like shortbread, in which case I only ever use butter.

No you can’t because the margarine has much water and you need the fat in the butter, when you cook you can change ingredientes in a recipe, but when you bake you can’t if you want a perfect result in bakeing a recipe is more a formula than a recipe.
