Sweet and sour chicken 1 1/2 cups baby-cut carrots 2 lb boneless skinless chicken thighs 1/2 teaspoon crushed red pepper flakes 1 jar (9 oz) sweet-and-sour sauce 1 can (20 oz) pineapple chunks in juice, drained 1 bag (1 lb) frozen bell pepper and onion stir-fry, thawed, drained 2 cups uncooked regular long-grain white rice 4 cups water 1. In 3 1/2- to 4 quart slow cooker, place carrots. Top with chicken; sprinkle with red pepper. 2. Cover; cook on Low heat setting 6 to 7 hours. 3Drain and discard liquid from cooker. Pour sweet-and-sour sauce over chicken in cooker; top with pineapple and stir-fry vegetables. Increase heat setting to High. Cover; cook 45 to 60 minutes or until vegetables are tender. 4. Cook rice in water as directed on package. Serve chicken mixture with rice. 6 servings. Prep time 10 minutes; start to finish 7 hour 10 minutes.
