Do acetate ions form salts?

Yes the do. Ever heard of sodium acetate? Its a pretty cool substance because it can form supersaturated solutions. You can add A LOT of that stuff to a small test tube, making it super saturated. Then you can pour the water out very carefully and it will be like you are pouring crystals out of the test tube. When the solution hits the watch plate or dish of some sort the force of the impact makes the sodium acetate crash out of solution. Its a really cool demonstration. Here is a video I found showing you the demonstration. They call it “hot ice” it is NOT hot ice. It is sodium acetate.
