Cheese really isn't good for mice-- too high in fat, salt & protein. They may or may not like the taste though. When I was a kitten I didn't realize that cheese was bad for them & gave my mice a bit of it. One liked it & the other ignored it. None of the mice we've lived with for the past several years have even tasted cheese since we adopted them. People associate mice w/ cheese b/c traps are sometimes baited with cheese. The bait needs to have a strong enough smell to entice the mouse. Also, in almost every "mouse" cartoon I've ever seen the mice appear to be obsessed w/ cheese.
