Do Model SA-21 Piemasters Roll Out Dough Sheets?
The Piemaster model SA-21 is a Semi-Automatic filling and folding machine that uses flat pieces of dough. Users of this machine need to provide pre-rolled pieces of dough to the Piemaster. The dough needs to be flattened or rolled to a thickness of 1/16″ (approximately) before delivery to the moldsets on the machine. Each piece of dough should be large enough to cover the cavity in both mold halves completely. One piece of dough must overlap both cavities. The dough can be round or square or of random shape. The only constraint is that it cover the molds. The Piemaster moldsets incorporate a trimming edge to remove excess dough from the finished turnover. Trimmed dough can be recycled back into the mixer with a fresh dough batch or may be blended with dough not yet flattened or rolled.
