CODEX Alimentarius is the Joint World Health Organisation and Food and Agricultural Organisation’s food code. It is a code that sets down international global requirements for trade in food. They have set a minimum standard for wheat starch that can be considered gluten free for the purpose of people with coeliac disease or gluten intolerance. We use starch that meets this standard to indicate to gluten intolerant individuals that they can eat Pringles despite the presence of wheat starch. Where this wheat starch is used but there are other gluten containing ingredients we do not use the term “gluten free” in relation to the wheat starch despite it being the same material. However, we do not say Pringles are completely gluten free but the International Food Code considers them to be gluten free, i.e. the majority of individuals who are gluten intolerant can use the product. The above information applies to the UK only. Unfortunately we cannot state what it is in other countries.
