This is the recipe i use, cooking time 1-2 hours Ingredients 225g/8oz chickpeas, uncooked 1.75litres/3pints, water for soaking 1.75litres/3pints water, for boiling 2 large onions, peeled and minced 2 cloves garlic 2 tsp ground coriander 2 tsp aniseed 2 tsp caraway seed 1 tbsp fresh parsley salt and freshly ground black pepper 10g/½oz fresh yeast or 5g/¼oz dried yeast a few tbsp water 2 egg, whites only 110g/4oz fresh breadcrumbs oil, for deep or shallow frying Method 1. Pick the chickpeas over, wash them thoroughly and leave to soak in a large bowl filled with the water for at least 8 hours preferably, overnight. 2. Then drain the peas, wash them again under a running tap and bring them to the boil in a pan of fresh water. Boil rapidly for at least 10 minutes, then turn the heat down and simmer until tender. (This will take from 45-90 minutes depending on the age of the chickpeas.) 3. When they are soft enough to grind, drain off the liquid and grind to a fine powder in a mill or food
