…and he liked his duck plain and simple and this is how we always had it. I, myself, do not like the gamey taste of wild duck, but the commercial tastes great and this is the recipe I still use. Wild Duck: Take your choice of apple slices, onion slices and/or celery tops and stuff into duck. Put bacon slices over the breast. Roast at 450* for 20 minutes for very rare (the juices is still red), a little more done, add 10 minutes to your cooking time and for well-done, cook 15 minutes per pound at 350*. Baste once in a while to get that crispy skin. Very plain and simple, but I found in my Julia Child cookbook, a great rub that I leave on the birds overnight and my husband puts the bird(s) on a spit on the grill, with the apples and onions inside and cooks for 1-1/2 – 2 hours (180*). Julia Child”s Spice Marinade: makes: about 1-1/4 cups I use an electric coffee grinder, but you can put all the spices on a piece of wax paper, cover with another piece of the wax paper and use a meat mall
