I had to make bagels for my baking practical this is the recipe i used: 8 oz Water .5 oz fresh yeast 1# high gluten flour 1oz malt or corn syrup .25 oz salt .13 oz salt Total weight 1# 9oz 161% Baking is a science, you know 1. Mix your yeast and warm water for about 5 mins 2. Add the remaining ingredients and mix for approx 10 mins on low speed. 3. Ferment your dough for 1 hour at 80F 4. Scale the dough into 2 oz portions 5. Flatten the portions and punch out a hole, then round the inside edges. 6. Boil each portion for about 1 min. 7. Bake at 450F for approx 20 mins, turning at the 10 min mark.  more
