Hi Heather! Not me personally, but I found a recipe on allrecipes.com

Ingredients

  • 1 cup cashew halves
  • 1 cup canned cream of coconut
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1/2 cup soy milk
 

Directions

  1. In the container of a blender, combine the cashews, cream of coconut, vanilla, maple syrup and soy milk. Blend until smooth and thick. Transfer to a container and store in the refrigerator. It will thicken even more after a while. Makes about 2 1/2 cups

I also have a recipe I invented called Walnut Cream Sauce if you would like to try that. I used it with salmon when I made it.

Preheat oven to 425 degrees.

1 salmon fillet

2 tablespoons butter

1 tablespoon flour

1/2 cup onion chopped

1 cup white mushroom, chopped

2 cloves garlic, minced

2 tablespoons lemon juice or 1/4 cup white wine

1 1/2 cups milk or half and half

2 tablespoons Dijon mustard

1/4 cup shelled walnuts

Salt, pepper to taste

1 tablespoon each dried tarragon and dried oregano

Olive oil

Place salmon fillet in oiled baking dish. Set aside. Meanwhile, saute onions, mushrooms, and garlic in butter until tender. Sprinkle with flour and cook for two minutes. Whisk in lemon juice, mustard and milk and cook until thickened. Ladel over salmon. Cover and place in top rack of oven; cook 20-25 minutes or until opaque and very tender. Serve with a salad, a steamed vegetable, crusty bread, and Parmesan for garnish. Serves 4.
