Heres my very own that i love making! Roast Vegetable Lasagne Ingredients: 1 Pack Instant Lasagne Sheets Half a Butternut Pumpkin 2 Large Sweet Potato 2 Spanish Red Onions 2 Zucchini 1 Red & Yellow Capsicum 2 Parsnip (And any other vegetables you want!) 1 Jar of Italian Cooking Sauce 1 cup tasty cheese Egg plant White Sauce: 1 Tbs reduced fat margarine 4 Tbs plain flour 2 1/2 cups skim milk Salt and pepper to taste White Sauce method: Melt margarine in a medium size saucepan, add flour and mix well with a whisk to avoid lumps. Slowly add milk, stirring constantly until sauce boils; add salt and pepper to taste. Remove from heat, leave for a few minutes to allow sauce to thicken. Method: Roast Vegetables. In greased lasagne dish add one thin layer of white sauce then a few dollops of Italian cooking sauce. Add one even layer of Lasagne Sheets. Then repeat white sauce and Italian cooking sauce adding a bit more this time. Add half of your mixed roast vegetables. Add some white sauce and
