Canning tomatoes is easy. They’re a fruit, so you can use a hot water canner to process them. 1.) First you’ll want to sterilize your equipment (jars, & lids). You can do this in a pot of boilling water, or in the dishwasher. 2.) While those are sterilizing, work on removing the skins from your tomatoes. To do this, simply cut a small X in the bottom of each tomato and then dunk into boiling water for a few seconds. Remove the tomatoes and immediately submerse them in cold water. If you find your tomatoes are turning into mush, you are boilling them for too long. After dunking them in boilling water the skins should easily slide off. Next, dice or halve your tomatos. You may also want to remove the seeds during this process. 3.) Put a small sauce pan of tomato juice on the stove and heat it to boilling. Put a lid on it so it stays hot until you need it. 4.) Gather your sterilized jars. Fill each jar with your diced/halved tomatoes, leaving about 1/2″ of space at the top. 5.) Add 2 TBSP
