Does anyone have any great veggie stew recipes with soya meat/quorn/tofu?

I don’t use any of those meat alternatives as I find them tasteless, I prefer just veggies on their own (I’m not vegetarian but I eat mostly veggie food) Serves 2 very hungry people: 1 x large onion, roughly chopped 2 x peppers (any colour but I like red and yellow) roughly chopped a couple of handfuls of baby potatoes, halved 4 x carrots, chopped in to chunks 2 x sweet potatoes, cut in to chunks 1 x tin butterbeans (drain the liquid off and rinse the beans) 1 x cauliflower, cut in to florets 1 x teacup full of frozen peas 8-10 mushrooms 1x clove garlic, chopped Vegetable stock Tomato Puree 1 x tin tomatoes Gently fry off the onions, peppers, garlic, and mushrooms til they are lightly browned. Add the carrots, potatoes, sweet potatoes, beans, cauliflower florets, peas (I guess you could also add the fake meat chunks here too) Add a healthy squirt of tomato puree, the tinned tomatoes and cover with veggie stock, bring to simmering point and transfer to an over proof casserole dish.
