Sure do. Chorizo and eggs with tortillas and salsa… I know it’s a bit heavy for breakfast but it’s quick and easy and you can make a bunch of it fast. Just use chorizo (removed from the skin). Fry that and add eggs. The eggs will scrambly as you cook them with the chorizo. Warm the tortillas and add the chorizo and eggs into the tortilla like a burrito. I put out salsa and shredded mexican cheese for add ons.

Fritatta’s are the way to go!! You can put anything you want in them and it only takes one pan. I know you are sick of eggs but if you put enough stuff that you like in it the eggs become just the binder. My favorite quick breakfast is peanutbutter and toast.

I pre-make breakfast burritos with sausage, eggs, and cheese. I freeze them in bags of two and when its breakfast time I just take them out of the freezer and microwave them and add salsa!!
