If you can’t buy it in your area, try substituting tofu and one teaspoon lemon juice. 1 tbsp. apple cider vinegar or rice wine vinegar 1/4 c. safflower mayonnaise 1/2 c. kefir cheese (or tofu and lemon juice) 1 tbsp. safflower oil Cayenne pepper, no salt Dissolve barley malt in apple cider vinegar. Mix mayonnaise and kefir cheese together and gradually pour in honey and vinegar, stirring constantly. Mix in oil and pepper. Pour over salad and toss. To use tofu, purchase firm tofu, drain and mash with fork or cream in blender.
