There are so many variations- this is a good simple and tasty one! Chiken Kabob ( Shish Taouk) 1 pound boneless skinless breasts, cubed 1 garlic clove, peeled and crushed, 3/4 teaspoon salt 1/4 teaspoon cinnamon 1/4 teaspoon black pepper 1/4 teaspoon allspice 2 tablespoons best quality olive oil 3 tablespoons lemon juice In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover and marinate the chicken for several hours in the refrigerator Thread onto pre-soaked wood or metal skewers. Grill over medium charcoal fire, basting and turning several times, until delicately browned. Serve with pita, hommus, tahini, etc.
