I am a fiend for French Onion Soup. Mine usually goes something like this: 4T butter 4 pounds onions, peeled, sliced fairly thinly 2c white wine a few tablespoons brandy, cognac, armagnac, maybe some Calvados if you’re adventurous 3.5-4c beef stock or low-sodium beef broth A few sprigs of fresh thyme or a couple healthy pinches of dried thyme Bay leaf Salt & pepper Toss the onions with a couple teaspoons of salt and cook over medium-low heat in butter for 20 minutes or so in a heavy stock pot or dutch oven without any stirring. After that, you can stir every few minutes until the onions turn a deep, dark brown color and smell like heaven. Add the wine and brandy and knock up the heat, reducing the liquid down to a loose jammy-syrupy consistency. Add the stock, thyme, bay leaf, some pepper, bring to a boil then simmer 20 minutes or so, uncovered. Meanwhile, slice some nice chewy, crusty bread. Broil in the oven for a minute or so.
