Mediterranean Orzo Recipe This will make 4 side portions or 2 main course portions – the recipe is easily doubled. I make it without the black olives and it’s great. Fill a 4-quart pasta pot three fourths full with salted water and bring to a boil for orzo. 2. In a small heavy skillet heat 1/2 tablespoon oil over moderate heat until hot but not smoking and sauté pine nuts with salt to taste, stirring frequently, until golden, about 2 minutes. Transfer nuts to paper towels to drain and cool. 3. Mince garlic and chop parsley. Quarter tomatoes and coarsely crumble feta. This dish captures Mediterranean flavors in a pasta dish that can be served either cold or warm. Orzo is a pasta that has a texture similar to rice. You can play with the ingredients. If you really like olives, add more of them or if you really like the taste of the feta cheese, add more of that ingredient. Mediterranean Orzo * 4 c. fresh spinach leaves * 2 TBS. olive oil * 1 garlic clove, crushed * 1 c. orzo, cooked according to package directions * 1/4 c. Kalamata olives, sliced * 1 TBS. lemon juice * 1/2 c. Feta cheese, crumbled In a medium skillet add olive oil, garlic and spinach leaves. Cook on medium high for 5 minutes. Meanwhile cook the pasta according the package directions and drain. If you are choosing to serve this cold you will need to cool the pasta at this point. In a large bowl combine the cooked spinach, orzo, olives, lemon juice, and cheese. Serves 3 to 4.
